Ramadan for cafés and snacks

Ramadan café snack offers in Morocco: hours, ftour, takeaway, regulars

During Ramadan, a café or snack in Morocco runs on a different clock: quiet days, one intense hour before ftour, then a second evening after taraweeh. Good Ramadan café snack offers in Morocco come down to three things: clear hours, set menus that are easy to prepare, and a team that lasts the whole month. Here is a practical method, from preparing the rush to bringing regulars back after Eid.

Ramadan hours: ftour, after taraweeh, shour

Most cafés and snacks rebuild their day around three moments. Look at your area before you choose: a snack near offices sells mostly takeaway before ftour, a neighborhood café lives in the evening after prayer.

Post your hours for the month on the door, on your Google profile and in your WhatsApp status a week before it starts. A customer who finds the door closed at 10 pm does not come back the next day.

For 2027, the Emirates Astronomical Society expects Ramadan to begin around Monday 8 February 2027 (reported by Gulf News, checked on 26 October 2026). This is only a forecast: in Morocco, the official date is announced by the Ministry of Habous and Islamic Affairs after the crescent moon is sighted, and it can differ by a day. Plan for both dates.

  • Afternoon: preparation and takeaway sales before ftour (pastries, bread, juice, dishes)
  • Ftour: dine-in or takeaway, the busiest moment
  • After taraweeh: coffee, tea, desserts, terrace evenings or a match
  • Shour (optional): only worth it if your area is busy at night; test it for a week before committing for the month

Building Ramadan café snack offers: ftour set menus

At 6 pm during Ramadan, nobody wants to read a long menu. Two or three fixed set menus are enough, built from items you can prepare in large batches ahead of time.

The items and prices below are examples: replace them with your own products and cost calculations.

  • Classic ftour (example): harira, dates, chebakia, boiled egg, msemen or batbout, orange juice, coffee or tea
  • Light takeaway ftour (example): harira in a sealed pot, dates, one pastry, a juice
  • Evening set (example): coffee or tea with a pastry, after taraweeh
  • Shour set (example): msemen, eggs, cheese, tea, if you open at night
  • Keep one round price per set menu, easy to announce and quick to take

Preparing the rush before ftour

The 60 to 90 minutes before the adhan carry a large share of the day's sales. Anything that can be done earlier should be.

  • Make harira and fillings in large batches in the afternoon, with packaging opened and ready
  • Pre-pack bags for the most popular set menus
  • Split the roles: one person takes payment, one prepares, one hands orders over
  • Set a cut-off time for takeaway orders, for example 20 minutes before the adhan, and announce it
  • Have change ready and a second way to take payment so the line never stops
  • Each night, note what ran out or what was left, and adjust the next day's quantities

Takeaway orders

Ramadan is the month of takeaway: many customers stop on the way home from work or order for the whole family. The risk is a crowd standing at the counter and bags going to the wrong person.

Take family orders in the afternoon (by phone or WhatsApp) with a name and a pickup time, and write the name on the bag. For last-minute customers, give a number at payment and call that number when it is ready, instead of everyone asking "is this mine?". Our guide on cutting the wait at the counter covers this in detail.

Your team during Ramadan

Your staff are fasting too. Tiredness hits late in the afternoon, at the worst moment. A good month is planned before the first day.

  • Two shifts if you can: one for afternoon preparation, one for the evening
  • Plan the team's own ftour: eat together right after the rush, or in short turns
  • Avoid long back-to-back days all month; follow the Labour Code and your contracts on working hours
  • Brief everyone on the set menus and prices so anyone can serve
  • Decide who closes at night, especially if you stay open late

Keeping regulars during and after Ramadan

Habits shift during the month: the morning coffee customer disappears, the evening customer shows up. After Eid, you want both to come back.

Keep your loyalty card running all month, set menus included. A customer who earns a stamp at ftour has a reason to return. When normal hours resume, tell your customers (poster, Google profile, WhatsApp status) that morning coffee is back. For more ideas, see our 10 loyalty ideas.

WhatsApp offers: only with the customer's consent

WhatsApp works well in Morocco to announce a ftour set menu, but only to customers who agreed to receive your offers. An unwanted message during Ramadan annoys people and can get your number blocked. Our page on WhatsApp promotions and Law 09-08 explains the rules.

  • One message before Ramadan to present your set menus and hours
  • At most one message a week during the month
  • One message after Eid to announce normal hours
  • Always a simple way to stop the messages

Where Stampylo can help, and its limits

You do not need Stampylo to run a good Ramadan. It helps with two things: the takeaway rush and bringing regulars back. The customer pays, scans the counter QR code and gets a number for the day; when the cashier screen taps "Ready", their phone rings. A TV can show ready numbers with a voice announcement in Arabic, French or English. A customer without a smartphone gets a ticket the cashier creates in one tap.

The digital stamp card only fills when an order is confirmed ready. WhatsApp reminders go to customers who stopped coming, and offer campaigns only to those who accepted marketing messages, at most one a week.

Limits: no online ordering or pre-orders, no QR menu, no till integration. On iPhone, the phone rings only while the page stays open (the "Enable alert" button keeps the screen on). Free 14-day trial, no card.

Questions

Should I open for shour?

Only if your area is busy at night. Test a few nights before committing for the month, and count the extra staff cost.

When does Ramadan 2027 start in Morocco?

An astronomical forecast by the Emirates Astronomical Society gives Monday 8 February 2027 (Gulf News, checked on 26 October 2026). In Morocco, the official date depends on the crescent sighting and is announced by the Ministry of Habous; it can differ by a day.

How many set menus should I offer?

Two or three are enough: a full ftour, a light takeaway version and an evening set. Fewer choices mean faster service.

Can I send a Ramadan offer to all my WhatsApp contacts?

No. Send offers only to customers who agreed to receive them, and always give them a simple way to stop.

Does Stampylo take ftour pre-orders?

No. Stampylo does not do online ordering. It calls orders already paid at the counter and runs the stamp card.
